About Us(Scroll down to read more)The culinary career of Nicola Moncada began in his hometown of Agrigento, Sicily. He was greatly influenced by his Father and Mother. His father was a fisherman and has inspired his great love and passion of preparing seafood specialties. His Mother taught him many recipes and “Mama Rosa’s Gravy” is featured on our Sunday menu. After Sicily, he made his way to Florence, London, Paris and New York before returning to Italy and opening his first restaurant in Novara, 30 miles west of Milano, in 1995. In 2000 he came to New Jersey and opened Due Nicola in Little Falls, a small but popular B.Y.O. Here his authentic Tuscan style dishes became very popular, especially “Zuppe di Pesce” a seafood masterpiece which is a signature restaurant favorite. Ready for a new challenge and ready to move on to the next level, Nicola sold “Due Nicola” in 2010. He went back to his roots in Italy for inspiration and after 4 months in Florence he came back to New Jersey to open “Il Cinghiale”. Here he enhanced his skills and recipes in preparation for his next move. The culmination of all his experience and training is “Benissimo” which translated in English is “Very Nice”.
